Ok, who doesn’t want a little pumpkin with their everything once Fall arrives? It’s like theeeeeee season’s food of choice. Well, Fall being my favorite of the 4 seasons, I didn’t want to disappoint. So I did what every basic b does…. I pinterested. Mmmm, pretty sure that’s not a word, but I’m going to stick with it. I was trying to find a new cookie recipe to make and stumbled upon this one. It is without a doubt the EASIEST and YUMMIEST pumpkin recipe I’ve ever made AND ONLY 5 INGREDIENTS!! 😳It’s not a healthy recipe for those who are wondering, but it’s the holidays; indulge a little!! 😏
On today’s menu: Pumpkin Spice Sugar Cookies 🤗
(Warning: You may want to consume all of the cookies right away once you eat your first one!)
1 roll refrigerated sugar cookies
2 tablespoons pumpkin pie spice
½ cup canned pumpkin (not pumpkin pie mix)
1 package (8 oz) cream cheese
3 cups powdered sugar
**You will need a blender or mixing tool.
- Heat oven to 350°F. In a large bowl, break up cookie dough, add pumpkin pie spice and pumpkin. Beat with electric mixer on medium speed until well blended.
- Drop dough by rounded tablespoonfuls 2 inches apart on ungreased cookie sheets. **I actually used muffin tins and it was the best decision. They come out even more fluffy than you could imagine. It’s like mini cookie cakes. 🤤
- Bake 15 minutes. Cool in muffin tin for 5 minutes; remove to plate or cooling rack. Cool completely, for about 30 minutes.
- Meanwhile, in a medium microwavable bowl, microwave cream cheese uncovered on High for 30 seconds. Stir and continue microwaving for another 30 seconds, until softened. Stir in powdered sugar until smooth. Spread on cookies. *I don’t actually like cream cheese, so I added in a bit of Cinnamon and Nutmeg into the frosting mix just to kick it up a notch. That little addition definitely helped; you can thank me later 😉.
These cookies can stay in a sealed container out on the counter, but I highly recommend refrigerating them. THEY TASTE AMAZING COLD! These fluffy, delectable little bites are better than pumpkin pies and in miniature form making them adorable and ready for the gram. So excited for you guys to try them!!
